Washoku, Japanese cuisine, was added to UNESCO’s Intangible Cultural Heritage in 2013. Washoku is associated with our respect to nature, and our custom surrounding washoku is closely related to sustainable living. Although the basic recipe, skill, seasoning and other cooking procedures are passed down in families, modern busy families opt for the easy way, if possible. These 2 cooking classes will show you the two sides/styles of Japanese cooking: the delicate way to make soba and the easy way to make sushi.

Secrets to Making Soba

Soba is the traditional Japanese noodles made from buckwheat. Making soba from a scratch is one Japanese cuisine that is not a home cooking. The depth of the procedures of making the dough, kneading it and cutting it into strips doesn’t allow any short cuts or easy ways. It’s not only technical but also artistic and requires craftsmanship. It is Japanese culture by itself. The chef used to run a popular soba restaurant up at Mt. Tento. He’s a passionate cook with strong appreciation of local culture. Try the challenge in a unique Japanese setting that overlooks the Okhotsk Sea and the Shiretoko mountains! It will surely be a lifetime memory! You’ll also be able to try out your handmade soba after class.

Quick & Easy Sushi Making

It’s an interactive cooking class with a local sushi chef and a sushi dinner to follow. Nabe-san, the sushi chef, will show you how to make sushi in the easy and modern way that we usually do at home. He’ll teach you the fundamental techniques of making traditional “nigiri” sushi and “norimaki” and apply it to the western sushi “rolls”. The class is casual and practical so that you can practice it back at home without any traditional sushi utensils or seasonings. While having the sushi dinner made by yourself, you’ll get to hear some sushi trivia and stories surrounding the local fishing industry.
